Herring balls
INGREDIENTS:
200 g Kaluri lightly salted herring fillet
30 g ,grated cheese
3 tbs flour
panko bread crumbs or Panko Bread Crumbs
oil for deep-frying
Dipping sauce
200 ml Greek yoghurt
100g cucumber
a handful of mint
salt
PREPARATION:
Pass the herring fillets through the mincer or chop them finely with a knife. Add the flour and grated cheese. Mix it all up. Roll the resulting mass into balls, bread them in a panko or breadcrumbs and fry them in a pan till they are brown in plenty of oil.
To prepare the sauce, put the grated cucumber on a sieve and add a pinch of salt to it. Stir the cucumber pieces and let them sit on the sieve for a few minutes. Then squeeze the cucumber to eliminate excess juice. Chop the mint, mix it together with the cucumbers and yoghurt. Season with salt.
